Heck Favorite Scalloped Oysters

Tina Heck, our Reservations and Communications Director, has worked at UCCR for 24 years. For those of you that don’t know Tina, she has a very large family including 5 siblings. When the Heck family gathers for the holidays, they need to make large quantities and this is one recipe that is easy enough to make, plentiful enough for everyone to have their share, and delicious enough to be a staple.

So we were delighted when Tina submitted this family favorite to share with you, enjoy.

Scalloped Oysters

Ingredients
12 Tbsp melted butter
3 Cups crushed ritz crackers
2 Pints oysters, drained, reserve juice
8 Tbsp oyster juice
4 Tbsp milk
1 dash(es) salt and pepper

Directions
Mix butter and cracker crumbs. Cut oysters in half. Spray casserole dish with Pam or grease with butter. Layer 1/3 of the cracker crumbs into a 13x9 pan (sometimes I use a deep 10" round souffle dish.) Add a layer of oysters. salt and pepper lightly. Repeat with a layer of crackers, oysters, etc. End with crackers crumbs on top. Mix milk and oyster juice and pour over the top.

Bake in 350 degrees oven for 35 minutes. Serve warm.
